No problems when used for cake/muffin batter December 19, 2008 Karen (Colleyville, TX United States) I didn't realize this was considered a candy mold also but I can certainly see why it would ill-suited for that purpose. As a mini bundt cake pan though, it seems perfect to me. I've made Mexican chocolate cake (from The Pastry Queen cookbook) dusted with X sugar and they looked perfect. I've also made red velvet cake and pumpkin muffins in this pan. I used Baker's Joy. I had absolutely no problem with getting them out with just the flick of a knife along the side of each one, and they had perfect definition. This pan makes great little two bite cakes/muffins which are easy for taking to work or anywhere you lack plates & forks for eating cake.
I am still trying to figure out how to use this pan properly December 6, 2008 mK (Boston, MA) I saw this baking pan at Crate & Barrel and William Sonoma. Wanted it so bad but the price kept me thinking. The patterns are so pretty and the size is just adorable. I got it on sale from Crate & Barrel afterall for about $24 and used it the day I got it. So far I've tried baking banana muffins and madelines in this pan. Apparently, as you can imagine, the fine details does not work well with the lighter muffin batter. But the muffins came off the pan easily. As for the madelines, only a few of them came off the pan. The rest I had to use my hand to pull out. And the patterns are not very crisp, though a bit better than the muffins. I confess I did not use vegetable oil spray before baking. So I'll try again with vegetable oil and see how it turns out. If it doesn't work then I'll return this item. If the fine details doesn't show, it may be an alternative to get an ordinary mini muffin pan. One concern I have with baking in this pan, is the cakes are so small the texture can get a bit on the dry side, leaving very little room for a moist interior. (mind you the cakes won't come out perfectly if it's still soft)
Not for making candy November 30, 2008 SandyH I have not heard of anyone who is successful in getting chocolates out of this mold. No amount of banging, freezing, vegetable spray, or butter seems to work. I even wrote to Nordic Ware and they have no advice. It may be OK for Tea Cakes but does not work for chocolate.
Very cute but not so easy to use August 27, 2008 Dressmaker (Silicon Valley) 1 out of 1 found this review helpful
I bought this pan on impulse because it is incredibly cute. The little cakes shapes are gorgeous! But despite using baking spray, the cakes did not come out easily, and they lacked definition. If I use more baking spray, I'm afraid I'll get even less definition. I'm going to try baking them a little bit longer, to get more browning and perhaps more firmness in the cakes. So, it's a darling pan but I can't give it 5 stars.
Good Release, but not well defined July 22, 2008 A. L. W. (Birmingham, AL USA) 1 out of 1 found this review helpful
I only used this pan to bake chocolate muffins. I used the Baker's Joy Flour Spray to ensure easy release and that worked great. However, the details of the designs were not well defined. Perhaps that would show up better using a lighter colored batter. But the size is perfect and I like Nordic ware products. I have not tried making chocolate candies with it, but perhaps turning the pan over and using a mini creme brule torch lighty near- but not touching the pan will get the chocolates out without melting them?
